VEGAN CHRISTMAS BALLS

Ball Ingredients:
1 cup dates
1 cup almonds
1/2 cup pecans
1/2 cup sultanas
1/4 cup dried figs
1 tbsp lemon zest
1 tbsp orange zest
1 tsp cinnamon
1 tsp ginger
1 tsp nutmeg
1 tsp ground cloves

Frosting:
1/3 cup cashews, soaked for at least 4 hours
2 tbsp maple syrup
2 tbsp plant milk
1 tbsp lemon juice
1/2 tsp vanilla
1 tbsp melted coconut oil

Decoration:
Pepitas
Goji Berries

Method:
1. Place all ball ingredients into a food processor and blend until all ingredients are stuck together.
2. Divide mixture into even sized balls and freeze while you make the frosting.
3. Drain the soaked cashews and place all frosting ingredients into a food processor and blend for a 2-5 minutes or until you have a smooth cream.
4. Spoon the frosting onto each ball and decorate with pepitas and goji berries.
